She shares how she was inspired to create these yummy foods without gluten so that those with Celiac Disease and other health conditions sensitive to gluten can enjoy good quality breads and pie crusts. Beth Hillson was diagnosed with Celiac Disease in 1954 and again in 1976. Beth had been a so-called “Banana Baby,” thought to outgrow the disease after a few years on a very restricted diet (mainly bananas). We now know that patients do no outgrow Celiac Disease.

She was re-diagnosed while living in Europe and attending culinary school so she could learn to eat defensively. In the process of learning the intricacies of preparing fine foods so she could ask the right questions in restaurants, she discovered she could create the same dishes at home by substituting gluten-free flous and without sacrificing taste and texture.

She serves as the president of the American Celiac Disease Alliance, and is the food editor and writer for “Living Without Magazine,” a lifestyle publication for people on special diets.
